I've got a genuine TRD Limited slip diff for my Starlet, but nobody seems to be able to give me any advice on fitting it. I've got the bare LSD unit itself that looks like this & I've got a spare diff to fit it to. Can I just bolt on a crown wheel onto the LSD unit, stick it in my axle with a new gasket, fill with oil & drive? I've heard bits about needing to set the backlash & preload, but can't find any proper details.

You need to get it set up correctly by someone familiar with diffs. It would be best to get a full new set of bearings , pinion oil seal and collapsable spacer.
Bearings dont need to be genuine toyota, take the old ones to a local bearing supplier ie BSL (formally bearing services ltd) and they will match up identical replacements.The brgs will be a lot cheaper and same quality as Toyota ones.
I rebuilt my TA22 GT diff many years ago , without any trouble, however I had access to all the equipment to set pinion preload, the backlash of the gears and the contact pattern,as my day job is overhauling gearboxes for gas turbines.
Talk to your local rally guys, particularly the mk2 escort brigade and they will point you in the direction of a good mechanic familiar with setting up diffs.

Did you get the LSD installed yet? Sadly not, I've spoken to a couple of people & neither of them seemed to know anyone who would fit it for me. A local garage said 'bring it round & we'll have a go' which wasn't really what I wanted to hear & the transmission specialist doesn't seem to return phone calls when I leave them messages, so I'm still a bit stuck!
